When you are coming out of a fast, it is important to ease your body back into the process of digesting regular foods. Because your digestive system has most likely reduced enzyme production and slowed down the process of digestion,overeating or ingesting certain foods too quickly may cause you to experience health problems such as nausea, stomach aches, or diarrhea. Introducing regular foods slowly and strategically will help you break a fast safely, without disrupting your digestive system. Break a fast by drinking liquids and eating fruits before moving on to your regular diet.Eat slowly and chew properly to allow your body to prepare itself for digestion.

Spiced Tomato

Ingredients:

Tomato juice-2 cups
Red chilli powder-1/2 tsp
Fresh mint leaves (chopped)-10-15
Lemon juice-1/2 tbsp
Salt-to taste
Black pepper- to taste

Method:

Place the red chilli powder,tomato juice,mint leaves ,lemon juice ,salt and pepper and ice in a shaker and shake well.Pour into individual glass and serve chilled.

Amaranth Carrot Parantha

Friends we are discussing here a recipe, which is rich in essential amino acids, fibre, vit A and packs minerals such as iron, magnesium, phosphorous, copper and manganese. Which is very nutritious and tasty.

Ingredients:

1 cup grated fresh carrot
2 tsp finely chopped green chilies
½ tsp lemon juice
2 tsp finely chopped coriander
Salt to taste
1 ½ cup amaranth flour
¼ cup boiled, peeled and mashed potatoes
½ tsp black pepper
Refined oil for cooking

Method:

Mix grated carrot,green chillies,lemon juice,salt,corriander leaves for preparing stuffing. Divide stuffing into six equal portions and keep aside. Combine amaranth flour, potatoes, pepper and salt in a bowl and knead into a semi soft dough using water. Divide kneaded flour into 6 equal portions and prepare 3”circle for stuffing. Place a portion of stuffing in a center of the circle seal it tightly. Roll out again into a 6” diameter circle using a little amaranth flour for rolling. Heat non-stick tava and cook the parantha using a little oil, till it turns golden brown in colour from both sides. Serve hot with green chutney and fresh curd.

Ingredients
200 gms soy chunks
150 gms cucumber
150 gms anar
100 gm onions
70 gms coriander leaves
25 gms green chilies
2 tbsp lemon juice
salt & pepper to taste
7 gms chaat masala

Method

Soak the soy chunks in water for about 15 mines. Chop coriander, onions, cucumber and green chilies keep it aside. Take mixing bowl put veggies, soy chunks, Salt & pepper and lemon juice. Toss all the ingredients together and serve chilled garnish with mint sprig.
