Couscous salad

With the onset of summer we all look forward for something cold ,refreshing and wholesome food that keeps us full and at the same time healthy too.
couscous salad with lots of parsley and green veggies is one such option to beat summer heat.
Ingredients :Serve 2
1 cup couscous
Salt and fresh ground black pepper
1 tbsp spoon olive oil
1 teaspoon crushed garlic
1/2 teaspoon honey
2 tbsp fresh squeezed lemon juice
1 zuchini, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh parsley
50 g feta cheese,scrambled.
Method :
Bring a large saucepan of 1 litre salted water to a boil. Add couscous,cover with lid and turn the flame off.Leave it for 10-15 minutes,till become tender. Drain Excess water.
While the couscous cooks, in a large bowl, whisk the oil, garlic, honey,lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.Add all the veggies and feta cheese and toss it well.Adjust the seasoning ,salt and pepper as per your taste.

Ingredients
1 cup green tea at room temperature
1 tbsp aloevera gel
1/2 tsp honey
2 slice of orange
1 leaflet of lemongrass
Direction:
Mix aloevera gel in green tea by churning them together in mixy. Add honey mix well. Top with orange slices and lemon grass and refrigerate till cool.

The practise of fasting is not just a ritual to follow but also a good time to detox your body if done properly.Fasting cleanse our body,removes toxins and keep us energised.
Papaya cutlet :serve-4
Ingredients
Grated raw papaya- 2 cups
Mashed boiled potato- 1/2 cup
Chopped coriander leaves- 1 spoon
Crushed ginger-1 big piece
Green chilli- 1-2
Salt- to taste
Olive oil- 1-2 tsp
Method- Mix raw papaya, coriander, ginger, and green chilli in a bowl.Mix potato and papaya mixture. Add salt to it. make round patties and flatten them in between your palms and give them cutlet shape. Roast on a non stick tawa. Serve it hot with some green chutney or tomato chutney.

Research studies have found intestinal cancer, specifically colo-rectal cancer being common in aging people and diet being the most important factor.
Poor dietary habits leads to obesity and so also proliferation of cancer.Diet high in dairy products/ meat and sedentary lifestyle has a lot to do with this intestinal cancer.
So to stay healthy at your late age also, we need to incorporate more of nuts,fruits and non starchy veggies such as bok choy,garlic,broccoli,nuts,oranges,berries etc in our diet.
Flexitarian diet where you include non veg once or twice a week and enough vegetables and fruits and whole grains the whole week goes well.

Healthy dinner recipes for wt.loss !

When you are on a wt. loss diet, its very important to watch what you are eating at dinner. Your dinner should be the lightest meal but at the same time it should not be boring and starve you.
Here are some interesting and very filling recipes which will satisfy your taste bud and hunger as well.
1.Zucchini noodle with chicken/ paneer
Ingredients
1 large zucchini
70 gm chicken boneless/ paneer (cut into pieces)
salt to taste
Ground black pepper- to taste
1 tsp olive oil
1 medium lime, juice
1 table spoon pesto sauce
Method
Using a spiralizer, make zucchini noodles, transfer into a colander, set aside.let the excess water drain out. if you don't have spriralizer, you can buy zucchini noodles from big super mart.
Heat 1/2 tea spoon oil in a large skillet over medium heat. Cook chicken/paneer with ¼ teaspoon salt until cooked (paneer just turn golden brown).Transfer to a large bowl and stir in 1/2 table spoon pesto.
Add the remaining 1/2 teaspoon oil to the pan. Add the drained zucchini noodles and stir gently until hot for 2 to 3 minutes.
Transfer to the bowl with the chicken/paneer. Add the remaining 1/2 table spoon and toss gently to coat.

2. Matar ghugni
Ingredients.
100 gm- fresh peas
¼ Cup -Fresh Coriander Leaves
Salt - to taste
1 tsp -Mustard Oil
4-5 - Cloves of Garlic (finely chopped)
¼ tsp- Black Pepper
2 - Green Chilies (finely chopped)
1 tsp- Cumin Seeds
1 tbsp chopped onion to garnish
1 tbsp chopped tomatoes to garnish
Method-
Put 1 tsp Mustard oil in a pan. Allow oil to heat up.
Add cumin Seeds, chopped Garlic and chopped green chilies. Stir until Garlic becomes light brown in color.
Add fresh green peas and mix well. Add some coriander leaves and salt. Mix well.
Cover and cook until green peas are completely done.Do not overcook, add crushed black pepper, remaining coriander leaves. Mix again.
Switch off the heat. Garnish with tomatoes and onion. Ghugni is ready to be served.
